PhD Overview
Development of probiotic yoghurt fortified with provitamin A rich Orange sweet potato (OSP) for healthy gut and provision of micronutrients. The study involved laboratory experimental formulation of the yoghurt, analysis of vitamin A, pro/prebiotic activity, sensory quality profile and Kenya community food consumers acceptability evaluation of the yoghurt.
